Deliciously moreish (mid-development) pork tacos.
THE “HYPERBOLE, EMBELLISHED” LONG VERSION
I take a pause, and admire the plate of tacos that sit before me; those pretty curled slices of pink pickled onions that gently adorn the mountain of meat, the pops of green from the spring onion, and the generous slick of chutney nestled beneath that protein. The admiration is short-lived as my mind wanders into strategising on how to tackle theses little beauties with dignity, class, and grace.
I soon snap-out of said pompous, overly self-conscious, and overthinking daydream; fold the nearest and dearest, and promptly shove it into my face.
Mmm… The first bite proves to be a delectable one.

I think most people will inevitably experience this at some point, especially when dealing with generous portions of chunky food. There’s always a few daredevil individuals that attempt to escape the impending doom of a mouth. Some land back on the plate (fantastic, we get another go!), but sometimes, just sometimes, they love to dive-bomb and splash around one’s lap leaving those horrible, unsightly food stains.
Many folk, including me, would occasionally be found yelping “nooooo…” (in that deep, slow-motion tone) at the prospect of gaining food-related blemished attire during an outing, but then there are a few that walk amongst us, these warriors, that laugh and proudly cherish their newly acquired battle scars, and stride forth into the night!

As a few pieces of pork break away, theres a brief wide-eyed moment as gravity pulls accelerates these nuggets south of my intended target; and thankfully they land safely on to my plate. What they leave behind and expose, is an unfurnished shard of the freshly grilled wheat-based tortilla that delivers a toothsome smokey char in the first mouthful. There’s something about the texture of the wrap that provide a satisfyingly feeble attempt at fighting my teeth from breaching the shell and liberating the treasures within.
As I breach the vessel, my tastebuds are hit with the acidic tang from the combination of the pineapple chutney and lime juice; both providing a necessary fresh, tart flavour to counter and highlight the headline act; chunks of belly pork where the previously hard, sinewy, and unpalatable fat and collagen, have been allowed to breakdown and transform into soft, buttery layers of piggy deliciousness.
And then there was none.
